The first thing you probably thought was tomato. :lol:
But then a tomato is a fruit! :D
So think again! :twisted:
I can't decide what is most versatile, maybe lettuce, or onions?
You can make salads with letuce and put it on sandwiches, but you probably wouldn't want to cook with it.
Onions work great in just about any recipe, and are usually better cooked than raw.
What is you nomination for most versatile vegetable? |

| Hmmm... maybe mushrooms, especially given all the varieties actually available. They work in salads. They work in soups. They work in stuffings. They can be stuffed. They work with eggs. They work as accents on skewers. They can be prepared as side dishes. They can be used as main dishes (in place of meat or as "burgers," etc.) . . . and this just covers some of the more commercially available kinds. :D |

Hmm. I eat a lot of mediterranean fare, so maybe eggplant? Ratatouille, curries, pasta sauces, Japanese "dengaku"(with sweet miso on top, baked) and tempura, melanzania parmigiana, on pizza, Chinese dishes, etc.
Mushrooms, too. Just now are we starting to get the regular "white mushrooms" as I loved in the states(called "brown mushrooms" over here!) but if we don't have those I can use shimeji or maitake in their place. Don't have an overpowering flavor like porcini, shiitake or enoki. |

| My vote is for the onion. I can use it in a lot of different dishes regardless of ethnicity. |

Aside from all the above, I can think of potatoes (and related root vegetables).
You can pretty much replace everything starchy with it, in one form or another. |

| I vote for potatoes too! I think there are 101 uses for it? Boiled, fried, baked, roasted, chipped, whole, mashed, creamed - the options are endless :D |
