I love to marinate stuff and I just love chicken marinated in rum! Haven't done it in a while, but I have also marinated chicken and beef (when I used to buy beef in the days of the horse and carriage :lol: ) in Angostura bitters. It gave it a different flavour which I liked :D

What? :shock: :shock: :shock:

Trouble?

How so? All you do is pour your marinade over the fish and let it sit in the fridge for a while before cooking... how is that troublesome?

Me is very confused! :? :?

Troublesome: go to fish market place, purchase fish after having made sure fish is fresh, go home with fish, clean fish of insides and stuff, put fish in jar, etc... :lol: :lol: :lol: :lol:

Buy pre-cleaned fish (while you're alreadyout grocery shopping), bring it home (since you were going to go home anyway), and, instead of just putting it straight in the fridge, put it in a shallow dish covered with the marinade of your choice... pull it out to cook come dinner time a couple of hours later. Simple! :D

One thing I've noticed about acidic marinades... make sure you don't leave the meat in them too long. It's almost like the meat gets "cooked", and the texture will be off afterwards.
