Sorry in advance that this isn't particularly helpful, but the latest issue of Cook's Illustrated had an article about how to best make Mexican rice. So if you pick up last month's issue, it'll be in there. |

Arroz a la Mexicana
4 Tbs salad oil
2 Tbs butter or margarine
2 cups long-grain rice
1 large onion, chopped
2 cloves garlic, minced or pressed
2 Anaheim chiles, stemmed, seeded & chopped(or 4 oz. can diced green chiles)
3/4 lb. tomatoes, peeled, seeded & chopped
4 cups regular strength chicken broth
1/4 cup firmly packed fresh cilantro(coriander) leaves, chopped
Heat oil & butter in a 4-6 quart pan over med. high heat. When butter is melted, add rice & cook, stirring, until lightly browned(about 3 minutes). Add garlic, onion & chiles & continue to cook, stirring, for 5 more minutes. Add tomatoes & broth. Bring to a boil; reduce heat, cover & simmer until liquid is absorbed and rice is tender(25-30 minutes). Remove from heat & stir in cilantro. Serves 6(384 calories per serving). |
